asparagus makes your pee smell...

BUT it is so good for you! Typically a SPRING vegetable, runner's and athletes alike can benefit from asparagus, as it is a good source of vitamin B6, calcium, magnesium, zinc, fiber, protein, potassium, iron and folic acid, and vitamins A, C, E, and K.  It is also low in calories and sodium making it a perfect side to a lean protein or a quick snack.

So here is a super easy way you can cook it.

All you need is:
Asparagus (duh) 
4 paper towels
Access to a microwave and a little bit of water (to wet the paper towel)
Pinch o' salt (You get enough of this from practically everything else you are eating so don't go too heavy)

Directions:
1.) Lay out paper towels (use 2 wide and double over)
2.) Clean and cut the bottoms off your green sticks (asparagus)
3.) Lay them out flat on the paper towel
4.) Sprinkle water on them until the paper towel is completely damp then roll paper towel from one end to the other
5.) Pop in microwave for 1 min 30 seconds
6.) Let cool in microwave for 1 min then remove, unroll, and EAT YOUR GREEN VEGGIES!

Did I mention it goes great with a little glass of crisp, white wine? My current favorite being a complex, grassy Sauvignon Blanc from New Zealand's Marlborough region.

  1. if you have an extra 10 min, drizzle with balsamic vinegar (or glaze if you have it), a touch of olive oil, sea salt, & fresh black pepper. put in the (toaster) oven for like 10 min and they're delightful. better yet- if you can get your hands on some "garlic expressions" salad dressing, well...you can thank me later. :)
